Potatoes cut this morning. Curds that squeak or they go back. Gravy simmered from real bones since six a.m. That's the whole idea, and we have spent six years refusing to complicate it.

How it's built
Three components. Each one is the whole job.

The fries
Russets, skin on, cut at 11 mm. Blanched at 150 °C, rested, then fried hard at 190 °C so the outside can stand up to what happens next. A soggy fry is a failure of planning.

The curds
Delivered from a dairy two hours west, never refrigerated below room temperature, used the day they arrive. If they don't squeak against your teeth, they are not curds, they are just cheese.

The gravy
Veal and chicken bones roasted dark, simmered six hours, thickened with a roux the colour of a paper bag. It goes on hot enough to soften the curds at the edges and nowhere else.

Questions we get
Is the gravy vegetarian?
The house gravy is not — it starts with roasted veal and chicken bones. La Forestière and La Diablesse are built on a mushroom gravy instead, and either can be made on any base dish. Ask at the window.
Why won't you deliver?
A poutine has a working life of about eleven minutes. After that the fries surrender and you are eating a very good soup. We would rather you walk to us.
Can I get it without curds?
You can get fries with gravy, which is a fine order and an entirely different dish. We will not call it poutine and neither should you.
Do you take cash?
Cash, card, and tap. There is a machine on the counter that has been rained on twice and still works, which is more than can be said for most of us.
